Okay, I have a serious question? Are you tired of pumpkin flavored everything yet?!?
I have to admit, I am not a pumpkin spice everything type of person and although I do love pumpkin, I do not love pumpkin spice humus, pumpkin spice sausage, pumpkin tortilla chips or pumpkin spice Pringle’s and Twinkies. Yeah, those are all real items you can purchase at the grocery store……
Maybe I’m a purist, but I prefer my pumpkin in pie, pumpkin bread, and in these simple and healthy pumpkin muffins! I actually keep pumpkin puree in my pantry year around because it is packed with dietary fiber and full of beta-carotene which is a powerful antioxidant that the body converts into Vitamin A. It also is a great substitute for oils in recipes and makes baked goods really moist!
These muffins come together very quickly in one bowl and are made with only healthy, real food ingredients including, whole wheat pastry flour, pure maple syrup, and cinnamon. You can even make them gluten-free by using oat flour instead of the whole wheat pastry flour and they will still be packed with whole grains!
